Hearty Vegetable Beef Soup
Ingredients
Beef
1½–2 lb beef chuck or stew meat, cut into chunks
1 tbsp olive oil
Salt & black pepper
Soup Base
1 large onion, diced
3 cloves garlic, minced
3 carrots, sliced
3 celery stalks, sliced
2–3 potatoes, diced (optional but classic)
1 cup green beans (fresh or frozen)
1 cup corn (optional)
1 (14.5 oz) can diced tomatoes
6–8 cups beef broth
1 tbsp tomato paste
Seasoning
1 tsp salt (adjust later)
½ tsp black pepper
1 tsp paprika
1 tsp Italian seasoning
1 bay leaf
Optional: splash of Worcestershire sauce
