🧁 Ingredients

Custard Layer:

  • One cup of creamy coconut milk (full fat, room temperature)
  • One cup of unsweetened almond milk
  • About 1/3 cup coconut flour
  • 1/4 cup finely ground almond flour
  • 1/3 cup erythritol or allulose, adjusted to your sweetness preference
  • 2 tablespoons tapioca starch (optional, helps improve texture)
  • Flax egg made with 1 tablespoon ground flaxseed and 3 tablespoons water
    (rest for 5 minutes before use)
  • A small pinch of turmeric (optional, for a natural yellow tone)
  • 1/2 teaspoon vanilla flavor
  • A pinch of salt

Whipped Topping:

  • 1/2 cup aquafaba (chickpea liquid)
  • 1/4 teaspoon cream of tartar
  • 2 tablespoons sweetener of choice (such as erythritol)
